The green of the chili and parsley, the white of the nogada sauce, and the red of the pomegranate form the colors of the Mexican flag in one of the most emblematic dishes of the month, traditionally enjoyed during the national festivities: chiles en nogada. Independence Day is celebrated on September 16, and the night before, the Mexican president reenacts the Grito de Dolores from the balcony of the National Palace in Mexico City.
