At HOW WE TASTE, we believe true luxury lies in an ingredient when it is given the freedom to speak for itself. The demanding, delicate, deeply expressive nature of Wagyu finds its natural stage at Chambao.

Rodrigo Rivera-Río understands meat like few others. He doesn’t disguise it, force it, or reduce it to a spectacle. He observes it. Listens to it. And brings it to the table with respect, weaving a narrative that spans Mexico, Asia, and his own personal story.

The result is a six-course tasting menu in which Wagyu is served raw, aged, braised, and as A5 beef, even transformed into dessert. Not as a provocation, but as an act of coherence.
