Javier Hernández: Leadership, Wine, and Excellence at Chambao Madrid

Behind every great dining experience, there is a story of passion and discipline. Javier Hernández Madrigal, Assistant General Manager of Chambao Madrid and Mamazzita Madrid, represents the commitment to excellence that defines our project in the capital.


From a Michelin-Starred Restaurant in Madrid to Chambao Madrid

Javier began his career at just 18 years old, training as a sommelier at the Madrid Chamber of Commerce. During his studies, he was offered the opportunity to join the two-Michelin-starred Paco Roncero Restaurante as a second sommelier, under the direction of renowned chef Paco Roncero.

There, he worked alongside acclaimed sommelier María José Huertas, managing a wine list featuring more than 1,000 labels. Over six years, he built a strong foundation in wine selection, fine dining service, and high-end restaurant management.


Leadership in the Wine Department

After his Michelin experience, Javier joined Grupo Rosa Negra to lead the wine program at Chambao Madrid. As sommelier, he curated the wine list, managed purchasing and inventory, and developed pricing and positioning strategies.

His professional growth was steady: he advanced to the dual role of maître and sommelier (known in Spain as “maîtrelier”) before becoming Assistant General Manager in 2025, combining technical expertise with strategic leadership in premium hospitality.

Specialization and Recognition in Sommelier Excellence

Javier holds advanced specialization in viticulture and winemaking, with expertise in both production and commercial strategy. He is a specialist in Italian wines and an Advanced Level Ambassador for Portuguese wines. He also has training in spirits and mixology, bringing a comprehensive vision to the beverage program.

In 2023, he received the “Sommelier Revelation” award. In both 2024 and 2025, he ranked 16th in the Top 100 Sommeliers Spain, solidifying his position among the country’s leading wine professionals.
