“Meat Experience by Rodrigo Rivera Río” is a limited-time experience that celebrates product excellence, mastery of fire, and gastronomic creativity.
The talent behind the experience
The menu was designed by renowned chef Rodrigo Rivera Río, the creative mind behind KOLI Cocina de Origen, a restaurant awarded a Michelin Star in Mexico in 2024 and 2025.
With a vision that fuses tradition, contemporary technique, and culinary storytelling, the chef crafted an experience that not only highlights the quality of wagyu, but also tells his personal story with meat as the central ingredient.

A Six-Course Menu Where Wagyu Shines
The experience begins with a Bone Marrow Wagyu Tartare, aged in mezcal and accompanied by Siberian caviar and grilled country bread.
Among the starters, standouts include the Hoja Santa Surf & Turf Hand Roll, featuring king crab and roasted bone marrow, and the Short Rib with ash mole, a deep and sophisticated interpretation of Mexican tradition.
The main courses further solidify the ingredient’s leading role:
Wagyu A5 Lorenza, topped with black truffle and lacto-fermented chiles.
Australian Wagyu aged in mezcal for 30 days, served with black garlic, tomatillo jus, and beetroot with yuzu.
The finale surprises with a Wagyu Crème Brûlée, incorporating the cut’s rich fat into a sweet, elegant, and unexpected creation.
