The iconic Grupo RosaNegra restaurant, Chambao, presents a New Year’s Eve menu to bid farewell to 2025: a seven-course tasting menu that transforms the last night of the year into a unique sensory experience, a journey that blends land and sea, subtlety and character.
More than just dinner, it is a celebration with soul. Every dish is a story, every toast a promise. Live music, golden sparkles and performances throughout the night turn the space into a stage of art and sophistication.
A dinner to remember, a toast to dream
The menu created for this special occasion begins with a welcome cocktail and offers a journey through refined flavors: oyster with green apple mignonette, dill and samphire; veal carpaccio with tonnato sauce and Grana Padano cheese; a seductive lobster bisque with brioche croutons; and a wild mushroom risotto with truffle and hazelnut butter that elevates the palate to another level.
The experience continues with roasted turbot with creamy shellfish sauce, an exquisite Creekstone sirloin with demi-glace, potato cake and vegetables, and a sweet finale of Basque cheesecake with homemade blueberry confiture. Everything is accompanied by a glass of Moët & Chandon to toast to new beginnings.

When the clock strikes midnight, Chambao’s spirit ignites in its purest form: an After Dinner Party driven by the rhythm of its resident DJ, live performances and exclusive shows.
The full New Year’s Eve experience at Chambao is available from €400 per person and includes access to all the special programming designed to bid farewell to the year. Service will run from 9:00 p.m. to 3:00 a.m., and at midnight, we will eat the traditional grapes together to welcome 2026 in true Chambao style: celebrating, vibrating and sharing.
